  cup raw macadamias, toasted lightly in the oven
 Vanilla to taste
 2 tbsp rice malt syrup
 400 ml coconut cream
 2 egg yolks

Whisk egg yolks and sweetener in a bowl over simmering water until it has doubled in size and is light and fluffy- 2-3 min.

Whisk in coconut milk, followed by vanilla and macadamias. Allow to cool.

Place in an ice-cream maker and let it work its magic. If you do not have one you will have to place in a container in the freezer and whisk with a fork every hour or so until set. With my ice cream maker the texture is perfect- just like ice-cream! If you love ice cream I recommend investing in an ice cream maker so you can make healthy ice cream. *You can use raw honey if you prefer. Rice malt syrup is fructose free which is better for weightloss and sugar cravings, plus it has a neutral flavour. Honey will add a honey flavour and contains fructose.
